I always like looking at the beautiful dessert, especially cakes! How pretty are they! This mousse cake looks quite complicated to make, but actually the mousse itself is so easy to make. What is the difficult part is need time to let the mousse set and then do the next layer. Once you make it, you will know the effort is so worth it.

草莓慕斯:
草莓果泥 100克
糖 15克
魚膠粉 5克
淡忌廉 80毫升

蛋黃 1隻

Strawberry Mousse:
100g. Strawberry Puree
15g. Sugar
5g. Gelatin
80ml. Whipping Cream
Chocolate Mousse:
1. Egg Yolk
20g. Sugar
60ml. Milk
5g. Gelatin
80g. Chocolate
100ml. Whipping Cream
Chocolate Glaze:
70g. Sugar
5g. Gelatin
30ml. Whipping Cream
40ml. Water
25g. Chocolate
做法Method
1. 海綿蛋糕可自己烘焙或買現成的蛋糕。在蛋糕上印出慕斯圈的大小,切出蛋糕,放在底層
1. Bake the sponge cake, then cut the size of the mousse ring and put at the bottom.
2. 草莓慕斯做法:用3湯匙水與魚膠粉/吉利丁拌勻備用。將草莓打成果泥,與糖拌勻,用小鍋煮至糖溶化,下魚膠粉/吉利丁煮至溶化,待涼
2. Strawberry Mousse: Use 3 tablespoons water mix with gelatin. Mix the strawberry puree with sugar. Cook at low heat until the sugar is melted, then add gelatin and cook until dissolved. Let it Cool.
3. 將淡忌廉/鮮奶油打發至抹端堅挺,加入草莓果泥,輕力拌勻,便成草莓慕斯。 將慕斯倒入模型內,抹平,可加入草莓,放入冰箱冷卻最少三小時至凝固
3. Beat the whipping cream until stiff, then add the strawberry puree, mix it gently. Then put it in the mousse ring, spread it evenly and add some strawberries. Chill in fridge for at least 3 hours until set.
4. 巧克力慕斯做法:用隔水加熱或微波爐將巧克力溶化。用3湯匙水與魚膠粉/吉利丁拌勻。蛋黃及糖拌勻,倒入已煮沸的牛奶內,再加入魚膠粉/吉利丁,煮至完全溶化,待涼
4. Chocolate Mousse: Melt the chocolate with mircowave or double boiler. Use 3 tablespoons of water mix with gelatin. Mix the egg yolk and sugar, then pour in the boiling milk and mix well. Add gelatin and cook until dissolved and let it cool.
5. 分三次將牛奶混合液加入巧克力漿內拌勻。然後將巧克力漿加入已打發的忌廉內,輕力拌勻,便成巧克力慕斯
5. Add the milk mixture into the chocolate sauce at 3 times. Then add the chocolate mixture in the whipped cream. Mix it gently, and this is chocolate mousse.
6. 將巧克力慕斯倒在草莓慕斯上,放入冰箱冷卻最少三小時至凝固
6. Then pour the chocolate mousse on top of the strawberry mousse. Chill in fridge for at least 3 hours or until set.
7. 巧克力鏡面做法:小鍋內將魚膠粉/吉利丁,糖及40毫升水拌勻,煮沸。然後下淡忌廉/鮮奶油及可可粉拌勻。將巧克力漿過篩,待至完全冷卻
7. Chocolate Glaze: Mix the gelatin, sugar and 40ml of water together, bring it to boil. Then add the whipping cream and cocoa powder to mix well. Drain it and let it cool completely.
8. 將巧克力漿淋在慕斯上,再放入冰箱冷卻至鏡面完全凝固
8. Then pour the glaze on top of the mousse, chill in fridge until it set.
9. 用熱毛巾圍著慕斯圈一會,然後慢慢脫模。把鋒利的刀浸在熱水內,用毛巾抹乾刀身,然後切件。每切一刀,要抹一抹刀面,又再浸入熱水內,抹乾,切件。這會令蛋糕切得更好
9. Use a hot towel around the mousse ring for a while, then remove the ring slowly. Soak a sharp knife into hot water, use a towel to wipe it, then slice it. Everytime do the same before a slice.
